Falafel is  orginally from Egypt.        Made   from fava beans or chickpeas.   Falafel is popular  from of fast food in the Middle East .Where it is as a meze.

The falafel balls may also  be eaten alone as a snack. Falefel is usually served in pitta -like bread called lafa, either  in side the bread , which acts as a pocket or wrapped in a flat bread.

In many countries falafel is popular street food or fast food. The falefel  balls may   be topped with salads, picles and hot souce ' and drizlled with tahini based souces.  ( see; Wikipedia)

When I visit    Israel; first time I taseted  the falafel I disappointed. It was dry .no souces, no salads ,  Maybe I didin,t know how  eaten..

So I  tired many recipes . This recipe the best acording me!? I add some bulgur and made a tahini souce, little hot paprika, salad, maybe pickles.. Or  plain yogurt sousce .. 

The falafel not Turkish food. But maybe  made  by  some restaurants .

<strong> </strong>


1cup chickpeas ,uncooked and soaked over night

1/2 cup fine bulgur

1onion, cut

1clove garlic

1cup fresh parsley

1/2teaspoon ground  cumin

1/3teaspoon black pepper

1/3 teaspoon   ground  coriander

1/4teaspoon baking soda 

1/2teaspoon salt

1table spoon olive oil



<strong>FOR FRYING</strong>

Sunflower oil


<strong>FOR SERVING</strong> 

Pitas, green salad , tahini and lemon ,lettuce lettuce leaves or palin yogurt. 




Drain the chickpeas an combine with the rest of the ingredients in a food processor.Processuntil the mixture is gritty.

Heat the frying oil .Scoop rounded   teaspoon or tablespoons of falafel mixture into hot oil and  fry until browned. remove  from the oil and drain on paper towel.

Serve hot inside pitas  sandwich - sytle with yogurt or tanihi souce and lettuce leaves.  Or as party dihses  souces side.

<strong>TAHINI SAUCE</strong> ; In a bowl wisk 1/2 cup tahini with 1lemon juice ,3 table spoons water. Add salt and 1clove  minced  garlic. 


<strong>Note</strong>: Add more water or lemon juice .


<strong>YOGURT  SAUCE</strong>:  Wisk 1cup plain yogurt with 1 clove minced garlic .1table spoon lemon juice  and  a little salt.
